Celery Carrot Cole Slaw

Celery is very low in calories. Two stalks of celery contain only 10 calories, yet their fibre content makes them very filling. It is a very good source of potassium. Celery leaves are the most nutritious parts of the plant containing more calcium, iron, potassium, beta carotene and vitamin C than the stalks.

Ingredients:
1 small Cabbage, sliced thin
2 cups thinly sliced celery
1 cup coarsely shredded carrots
1/2 cup Raisins
2 tablespoon Cider vinegar
1/2 teaspoon White pepper
1 cup Plain low-fat yogurt
1/2 teaspoon Celery seed

Method:
In a large bowl, combine cabbage, celery, carrots, and raisins. Stir together vinegar, pepper, yogurt, and celery seed. Pour over vegetables and mix well. Chill. Serve
